To set up link tracking for emails, telephone numbers or just any link on a website, Google Tag Manager is the best way to do this.

Don't forget the next step: setting up your goal in Analytics. It's really important to use the same fields as you previously set up in Tag Manager or the two won't be linked together.
It's always good to verify the goal and check that Google Analytics has registered some use of it previously. This means the goal tracking is working successfully. If it says 0% conversion rate, don't fear as the goal may not have ever been completed on the site. I would keep a close eye on this though to double check it's working. Alternatively, carry out the goal yourself and check your raw data view to see if the goal has been triggered.
